Whole spelt flour is blended with white spelt flour to create a lighter, fluffier spelt pancake.

For each cup of mix, add 1-1.5 cups of liquid (milk, milk substitute, water, etc.), 1 egg (optional), and 1 tsp oil (optional). Mix just until lumps disappear, then spoon onto the hot oiled griddle, and flip when bubbles appear.
